Esteemed journalist Debora Patta visited us recently at Thali.
Debora sat down with head chef Nate, and spoke about his food, inspiration, growing up in Mitchells Plain, and giving back to his community. Nate takes Debora into the kitchen to show her some knife skills as well as how to wrangle the coal-fired tandoor oven, and later shows the soup kitchen that he runs in his spare time.
Thali serves contemporary Indian food, expressed through a South African and global lens. The meal consists of a sequence of small dishes, each demonstrating the chefs’ skill as they work with textures, spices, and fresh flavors in a truly unique way.
